Just Call Me "Ma Ingles"


Trust me...I would have made the folks on the prairie very proud.  Or, maybe that's what I was telling myself at about the 3rd hour of these ridiculous caramels!!!

My dear friends, Katie and Alesa have created a very fun tradition of doing some holiday baking together each year.  Well, this year, Alesa wasn't able to make it out to Illinois for this, so Katie invited myself and Kendra to fill in! What could be more fun?!

So, I called up my sister, Heidi to get the famous caramel recipe.  I was determined to make something Ah-mazing.  The key?...stirring until my temperature reached 245 and not letting the caramel burn.  No problem.  I was going to be Eeyore all the way.  Slow and steady...

At about 1:30, I called Heidi and asked if it was normal to be stirring for 3 hours!  Let me just let you know...it's not.  It was supposed to be closer to 30 min.  I think her exact words were, "Oh my word, Tami. Turn up your heat!"

4 hours and thousands of strokes later...

The result?...

I feel those 140 little wrapped caramels giggling at me every time I look at them.  Or maybe it's Katie and Kendra! Either way, it was a fun afternoon with great friends...but I've learned my lesson for next year!

it always takes me forever to do caramels, too. and usually i'm not one to keep the heat low. but i know you can burn them, or get little flecks in them so easily. so an hour and a half is VERY normal for me. (hence the reason i never make them.)

Ha! Kristi and I made caramels together last Friday night... 2 batches. She told me, "I have never been able to make these and NOT burn them." Guess what!!! We DIDN'T burn either batch, they were both BEAUTIFUL! We, too, felt like we were stirring forever but it was no 3 hours! IT is hard work. I can't imagine stirring for that long. During our caramel session, I kept telling Kristi that I don't think it's my personality type to make these. The instructions are too detailed and you have to be really precise or else you mess them up. And you have to be patient. Kristi is better at that kind of thing than I am. I kept saying... "Aren't we close enough to 245 degrees? Close enough is good enough!"

Well, I am glad these caramels turned out for you, even if it was 3 hours later!

So glad you FINALLY finished them! I always feel like it takes 3 hours to do these...but have never actually taken this long. haha.

Can't wait to try them!

Oh my word - you have WAY more patience than me! I can't believe you stuck with it. This is why I will just buy caramels. :) Glad they at least turned out for you! Enjoy them!
